Vegetarian Review

I was surprised just what a gem of a cookbook this was when I was given this cookbook by a non-vegetarian. I find the recipes to be simple to prepare and most, if not all, ingredients can be found at home or easy enough to get in a local grocery store. I have not made a bad recipe yet from this book and the pictures for every dish are greatly appreciated! I also enjoy the front of the book that covers the basic parts of a vegetarian diet (with more pictures) and explains the nutritutional aspects.
I have a mother with cancer who I am encouraging to move towards a vegetarian diet. I'll be buying this book for her as I find it is a great introduction to the nutritional benefits and also pleasures of a vegetarian diet.
Again, if I could only have 1 cook book on my shelf this would be the one!
