I've been looking forward to this book, and I suppose I'm not let down - it's got page after page of appealing recipes. But that means I would enjoy them, not that I'll actually cook them. The large majority of recipes in "Vegetarian Entrees" go for comfort-food tastiness, not healthiness. As someone who is starting to lean toward making all animal products a rare treat rather than a daily component of meals, I'm a bit disappointed by the amount of cheese and other dairy, and eggs (which even get their own chapter), in these pages. I can't fault the guy, because it's obviously not meant for the vegan crowd. But if I'm going to get in the habit of cooking with an eye on my health, I'll have to skip a lot of these recipes or save them for special occasions, and make substitutions to make them a little healthier. That said, he does use a lot of vegetables, and the recipes use common ingredients and seem simple to make. And there are some healthy options, like cassoulet, lentil dishes, stir-fry and curries. Also, some of his basics - like vegetable stock and salad dressings - catch my eye, even though I've seen versions in countless other cookbooks.
